• Fr08apr_cover_small_2We’ve recommited ourselves to regularly holding Family Home Evening.  Tonight we didn’t have a lot of time, but had a lot of desire to spend time together.

    We pulled out the "Friend" and read a couple of stories.  One story we read, "Bullies and Brothers", is about a brother who came to the rescue of his sister when some older girls were bullying her at school.  That night she put the "red plate" in her brother’s place at the table because he had been so kind to her.  Everyone in the family knew that the red plate meant that he had done something special.Amber_2

    That’s the tradition I want to start … the red plate.

    How lucky am I to have the mom I have?  Pretty darn lucky!

    Being the only girl, we’ve always stuck together.  It’s a good thing that we are best friends! 

    After teaching at the Expo, my dad, brother Dave and his family (including my new niece) and us had a nice dinner.  It wasn’t big since my mom was sick.

    Things weren’t always perfect growing up.  I think it’s easy to look back and only see the good.  I am grateful for the parents I have … especially my mom Amber_2today!

  • but I don’t think she has time to read my blog for a couple of days.  So, did you see her on Good Things Utah and Studio 5?  She’s going to be on Channel 13 and Channel 2 on Friday morning from our booth at the Expo.  She’s doing a great job!  Way to go Shyloh & A Page 4 All Seasons!

  • Oaks_medium_3Saturday night we went with a few extended family members to a production of the Music Man that was put on by my Grandma’s Stake.  While we were waiting for the play to start, we noticed a very distinguished older gentleman wearing a suit.  It was Elder Dallin H Oaks.

    Neal wanted to go meet him, so he and Bryan went over.  While waiting their turn to meet Elder Oaks, Neal got cold feet.  During "half time" (as the boys call it) Neal got up the nerve to go again, but there were a lot of people, so Bryan said he would give him $5 if he would go by himself.  He walked right up to Elder Oaks and said, "Hi!  I’m Neal" and stuck out his hand.  When he got back to our seats, he was so proud of himself he was beaming with pride.  Then he asked for his money. I only had a $10 bill so he was thrilled with his bonus.  More importantly, he had the opportunity of a lifetime to meet an Apostle. 

    I was telling him that I’ve never met an Apostle and he asked me why I didn’t go with.  It got me thinking … how many times do I deny myself an opportunity that I Amber_2wouldn’t deny my children?  It’s definitely something to think about.

    (A side-note, Riley and my mom were walking up the aisle and stopped to shake Elder Oaks hand, but Riley got scared and pulled his hand away.  Elder Oaks just laughed.)

  • We are making cookies for our upcoming Spaghetti Dinner & Auction tonight for Young Women.  Since we’ll need to worry about the fresh foods the week of the auction, but would also like to have the girls actively engaged in getting ready, we’ll make the cookies tonight & freeze them. 

    It will be fun.  I am a little worried, however, because this is what happened the last time we made cookies:

  • While I was on Good Things Utah yesterday, Angel Shannon (she is so nice), demonstrated this recipe.  This dish smelled so delicious, I had to try it myself.  And, guess what!?  The boys LOVED it!  They ate everything that was put on their plate.

    INGREDIENTS:

  • 2 tubes of buttermilk biscuits (10 count each)
  • 3 Tbs of your favorite pesto
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1 1/2 cups rotisserie chicken, shredded
  • 3 Tbs roasted red peppers, chopped
  • 2 Tbs Black olives, chopped 
  • Fresh Parmesan Cheese
  • Marinara or Alfredo Sauce

    PREPARATION:
    Lay biscuits on floured countertop to form a 9 x 11-in rectangle (4 biscuits down, 5 across.) Using flour as needed, press biscuits together well.

    Blend pesto into the cream cheese and spread mixture over entire surface of dough. Distribute chicken evenly over pesto cream. Sprinkle chopped peppers and olives over chicken.

    Carefully roll up from the long end and gently compact as you go. With seam side down, slice into 12 equal sections. Place slices, on their sides, into greased 10-inch round pan or cast iron skillet. Drizzle lightly with sauce and sprinkle with parmesan.

    Bake for 20-25 minutes at 375 degrees.Amber_2
