I had to take a few minutes away from organizing, editing and adding the finishing touches (like a blog banner and my project) to the My Mind’s Eye December newsletter to quickly share with you my Thanksgiving pie success!

One delicious pumpkin pie (at least I’ve heard this since I don’t like pumpkin pie – which really is a shame because it smells so delicious):
I can cook, I do cook, but it’s not something I look forward to. My problem is that I am easily distracted when I cook so something that will take someone else 30 minutes to make can take me 2 hours and by that time the kiddos are “starving”!
Since I am easily distracted when cooking, I tend to burn things. So, when it’s a big occasion like Thanksgiving, I purchase extra ingredients just in case I have to remake my part of the meal (like I did the ghost cake at Halloween and the cupcakes for Pack Meeting a few days later).
Guess what!? I didn’t even have to remake either of these. They turned out right the first time! Miracle of miracles! And… it was the first time I made pumpkin pie!
